Lemon Racin' Pie

Quick to make. Freezes in 4 hours. Disappears in minutes.


zest of 4 large lemons, then juiced

pre-made Graham cracker, or ‘Nilla Wafer, crust pie, 9” tin,

2 cans sweetened condensed milk. 14oz. each

real whipped cream or Reddi-whip topping


combine lemon juice, zest, and condensed milk

pour into pie shell

re-cover with plastic insert

freeze 4 hours

add whipped cream layer

decorate to suit with lemon slices, or ‘Nilla Wafer halves

serve as cold as possible
